Ingredients
  

  • 1 lb Large shrimp (peeled & deveined, tails on or off)
  • 12 oz Smoked or andouille sausage, sliced into ½-inch rounds
  • 2 tbsp Olive oil
  • 1 tbsp Hot sauce (like Tabasco or Frank’s Red Hot)
  • 1 tbsp Lemon juice
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • ½ tsp Onion powder
  • ½ tsp Chili flakes (adjust to taste)
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish (optional)
  • Wooden or metal skewers

Ingredient Tips:

  • Use extra-large shrimp for best texture and grillability.
  • Andouille sausage adds extra heat and flavor.
  • Wooden skewers? Soak them in water for 20 minutes to prevent burning.

Instructions
 

  • Marinate the Shrimp:
    In a large bowl, whisk together olive oil, hot sauce, lemon juice, smoked paprika, garlic powder, onion powder, chili flakes, salt, and pepper. Add shrimp and toss to coat. Marinate for 15–20 minutes.
  • Assemble the Skewers:
    Thread shrimp and sausage alternately onto skewers. Aim for 3–4 shrimp and 3–4 sausage slices per skewer.
  • Grill the Skewers:
    Preheat grill or grill pan over medium-high heat. Lightly oil the grates. Grill skewers for 2–3 minutes per side until shrimp turn pink and opaque, with nice grill marks.
  • Garnish and Serve:
    Sprinkle with chopped parsley or cilantro if desired. Serve hot with lemon wedges or a creamy dipping sauce.
