  • 2 pounds 900g sirloin steak, cut into 1½-inch cubes
  • 2 bell peppers cut into chunks
  • 1 large red onion cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

For the Garlic Herb Butter

  • 6 tablespoons 85g unsalted butter, melted
  • 4 garlic cloves minced
  • 2 tablespoons fresh parsley finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon fresh rosemary minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Season the Steak: Place the steak cubes in a large bowl. Drizzle with olive oil, then add the salt, black pepper, garlic powder, and smoked paprika. Toss until evenly coated and let rest for 20 to 30 minutes.
  • Prepare the Vegetables: Cut the bell peppers and red onion into similar-sized pieces so they cook evenly alongside the steak.
  • Assemble the Kabobs: Thread the steak, peppers, and onions onto skewers, alternating the ingredients. Leave a small space between each piece to encourage even cooking and better browning.
  • Make the Garlic Herb Butter: In a small bowl, combine the melted butter, garlic, parsley, thyme, rosemary, salt, and pepper. Reserve some for serving and set the rest aside for brushing during grilling.
  • Preheat the Grill: Heat the grill to medium-high, about 400°F to 450°F (204°C to 232°C). Clean and lightly oil the grates to prevent sticking.
