Ingredients

  • 1 lb Large shrimp, peeled and deveined
  • 12 oz Andouille sausage, sliced
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 Yellow onion, sliced
  • 2 cloves Garlic, minced
  • 1 ½ tbsp Olive oil
  • 1 tbsp Cajun seasoning (store-bought or homemade)
  • ½ tsp Smoked paprika (optional for extra depth)
  • Salt & pepper, to taste
  • Fresh parsley, chopped for garnish
  • Lemon wedges, for serving

Cajun Seasoning Spotlight:

  • 1 tsp Paprika
  • ½ tsp Garlic powder
  • ½ tsp Onion powder
  • ½ tsp Thyme
  • ½ tsp Oregano
  • ½ tsp Cayenne pepper (adjust to taste)
  • Salt & black pepper

Instructions

  • Season the Shrimp:
In a bowl, toss shrimp with Cajun seasoning, smoked paprika, and a little olive oil. Let it marinate while you prep the veggies.
  • Sauté the Sausage:
Heat a large skillet over medium heat. Add sliced sausage and cook until browned on both sides (about 3–4 minutes). Remove and set aside.
  • Cook the Veggies:
In the same skillet, add a bit more oil if needed. Sauté onions and bell peppers until soft and slightly caramelized (5–6 minutes). Add garlic and cook for 30 seconds.
  • Add the Shrimp:
Push veggies to the side and add shrimp to the pan. Cook for 2–3 minutes per side until pink and opaque.
  • Combine and Finish:
Return sausage to the skillet and toss everything together. Adjust seasoning, garnish with parsley, and serve with lemon wedges.
